The Boiler Room

The Boiler Room at 1110 Jones St. in the Old Market opened in 2009 in a restored turn-of-the-century warehouse, started by restaurateurs Mark and Vera Mercer with Paul Kulik as opening chef. Now led by executive chef Tim Nicolson, it pairs European and French technique with Midwest ingredients and makes much of its charcuterie in house, and is often credited with helping redefine Omaha dining.
