Owner Shane Peed opened it in 2020, and executive chef Zach Midgett, a former sous chef at The French Laundry, joined in 2022. The menu centers on Nebraska-raised Piedmontese beef, handmade pasta and a six-course tasting menu, and its wine list of more than 250 labels has a Wine Spectator Award of Excellence.
